Spicy Cornbread

  • 2 Cup yellow cornmeal
  • 1 Cup all purpose flour
  • 1 1/2 Tbsp baking powder
  • 2 Tbsp brown sugar
  • 1 1/2 tsp salt
  • 3 large eggs
  • 1 1/4 Cup lowfat milk
  • 1/2 Cup unsalted butter , melted
  • 1 Cup corn kernels
  • 1 Cup shredded Colby cheese , grated
  • 1/2 Cup carrots, grated
  • 1/2 Cup onions , grated
  • 4 Tbsp jalapeno pepper , finely chopped
Preheat oven to 400 ℉. In a bowl, combine cornmeal, flour, baking powder, brown sugar, and salt. In another bowl, whisk eggs, milk, and melted butter. Add to the dry ingredients. Add remaining ingredients and stir thoroughly. Grease a 9x13 inch baking pan. Pour batter into baking pan and bake for 30-45 minutes, or until a toothpick inserted in the center comes out clean.
