Citron Risotto

  • 1 medium onions , finely chopped
  • 6 fresh basil leaves , finely chopped
  • 2 Tbsp extra virgin olive oil
  • 1 Lb Arborio rice
  • 2 Quart chicken stock
  • 2 lemons , juice and zest
In a sauce pot, saut'e onions until transparent. Add basil, rice, and chicken stock. Bring to a boil. Add lemon zest and juice, then remove from heat, cover, and let stand until desired thickness. Season to taste.
