Trinidad Summer Chicken Salad

  • 3 Cup pre-cooked chicken breast , diced
  • 1 red bell peppers , diced
  • 1/2 Cup red onions, minced
  • 1 cucumbers , diced
  • 1 1/2 Cup pineapple , diced
  • 3 Tbsp olive oil
  • 4 Tbsp fresh lime juice
  • 1 Cup parsley
  • 1 Cup fresh chives , finely chopped
  • 4 Tbsp thyme , leaves
  • 2 Tbsp orange zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
In large bowl, toss together chicken, red pepper, red onion, cucumber and pineapple. In bowl of food processor, place all ingredients for dressing. Process until pureed. Pour dressing over salad ingredients and toss well. Serve immediately, or cover and refrigerate until served.
