Mexican Cheese Omelet

  • 2 large eggs
  • 8 slice mozzarella cheese
  • 2 Tbsp milk
  • pinch salt and pepper
Beat eggs well, and then add cold water or milk, salt and pepper. Lightly grease a pan and pre-heat it at a low temperature. Pour the eggs in the pan and lightly cook. Place the slices of cheese over the eggs, cover, and cook for 3 minutes. When the borders are well cooked, fold the omelet in half and cook for a few more minutes and serve hot.
