Cranberry Orange Coffee Cake

  • 2 Cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 3/4 tsp salt
  • 2 eggs
  • 1/2 Cup butter , room temperature
  • orange zest from one orange
  • 2 Tbsp fresh orange juice
  • 1 Cup sour cream
  • 1/2 Lb dried cranberries
  • 3/4 Cup brown sugar
  • 1/2 Cup sugar
  • 1 Cup walnuts , chopped
  • 2 tsp ground cinnamon
  • 2 tsp vanilla extract
Butter 10 inch tube pan. Preheat oven to 325 ℉.

In a medium bowl, whisk together 2 normal cup flour, baking powder, baking soda and salt. Set aside.

In a large bowl, beat together eggs, 1 normal cup sugar, butter, 1 normal tsp vanilla, orange zest and orange juice, using an electric mixer. Add the flour mixture and beat until just combined. Add sour cream and mix until smooth. Fold in cranberries.

In a small bowl, fork together brown sugar, remaining white sugar, walnuts, cinnamon and remaining vanilla.

Pour half of the batter into the prepared cake pan. Spread evenly and sprinkle half of the streusel mixture over. Layer remaining batter and streusel.

Bake for 40 to 50 minutes, or until a toothpick comes out clean.
