Herb Roasted Red Skinned Potatoes

  • small red potatoes , washed and halved (or quartered if they're larger)
  • 6 whole cloves garlic , peeled
  • 4 medium shallots , peeled and halved with the root intact
  • 3 sprigs fresh rosemary
  • 3 fresh thyme sprigs
  • 1/2 tsp olive oil
  • 1/2 tsp butter
Preheat oven to 375 ℉. Melt the butter with the olive oil in a large roasting pan. Toss all of the ingredients in the butter/oil mixture to coat evenly. Roast the potatoes for about 45 minutes until golden brown and tender.
