1 1/2 Lb lean ground beef , divided and formed into 4 patties4
4 hamburger buns , split
3 tomatoes , cored and cut in quarters
4 Tbsp olive oil
1/2 tsp chopped fresh thyme
1/2 Lb Parmigiano-Reggiano cheese , shredded using a cheese box grater - larger grate
Pre heat oven to 350 ℉.
On a foil lined sheet pan or cookie sheet place 1 normal Tbsp of the shaved parmesan cheese approx. 3 inch apart. Bake for 5 minutes or until cheese melts and turns a golden brown color. Remove pan from oven and cool. When cracklings are cool and have hardened, carefully remove and save.
Arrange cut tomatoes on a foil lined cookie sheet and season with olive oil, salt and pepper.
Roast in pre-heated oven for 6-8 minutes or until wilted and starting to caramelize. Keep warm.
Season burgers with salt and pepper and grill to desired doneness.
Top prepared burgers with roasted tomatoes and Parmesan Cheese Cracklings.
