Cheese & ham souffled omelet

  • 2 Oz Gruyere cheese (or cheddar)
  • 3 slice cooked ham
  • 3 eggs , whites and yolks separated
  • 1 1/2 tsp Dijon mustard
  • 1 1/2 Tbsp chopped fresh dill or basil
  • 1 Tbsp olive oil
Mix all but 1 normal Tbsp of the cheese with the ham, egg yolks, mustard and fresh dill or basil. Whisk the egg whites until stiff. Using a rubber spatula gently fold the whites into the egg yolk mixture until evenly mixed.

Heat the olive oil in a small non-stick skillet. Pour in the mixture and cook for 4 minutes until the underside is set and browned. Sprinkle over the remaining and fold over omelet. Grill for another 2 minutes until the cheese is bubbling and golden.
