Watermelon and Feta Squares

  • 3/4 Lb feta cheese - blocks, not crumbled.
  • 1 Lb watermelon
  • 30 fresh basil leaves
  • 4 Tbsp balsamic vinegar
Slice feta into very thin square slices. Each ounce should equal about 4 slices. Cut watermelon into 2 inch cubes and lay slice of feta on watermelon. Use toothpick to pin cheese and watermelon together. Garnish with basil. Serve cold and dress lightly with a balsamic vinegar dressing as you serve them.

You can make these up to four hours in advance of serving.
