Doreen's 'Date a Nut' Bread

  • 2 Cup all purpose flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/4 tsp ground allspice
  • 1 Cup dates , pitted and chopped
  • 1 Cup chopped pecans
  • 1/2 Cup unsalted butter , softened
  • 1 Cup sugar
  • 2 eggs
  • 1/4 tsp almond extract
  • 5 1/4 Fl Oz lowfat milk
Preheat oven to 350 ℉. Sift first 5 ingredients together in a bowl. Combine 1/4 whole cup dry volume flour mixture with chopped dates and nuts in another bowl. Combine butter and sugar in a mixing bowl and beat with an electric mixer until light and fluffy. Add eggs one at a time, beating thoroughly after each addition. Add almond extract and beat another 2-3 minutes. Add dry ingredients alternately with milk, beating after each addition. Fold in date and nut mixture by hand. Spoon into 4 whole well-greased mini-loaf bread pans (5.75x3 inch) and bake 25-30 minutes until a tester comes out clean when inserted in center.
